If there is pasta in Italy, there is kalguksu in Daejeon. For Daejeon people, kalguksu is a special food. It is not just a meal that fills one's hunger, but a food that contains affection and a piece of history that has been passed down for a long time. The reason why kalguksu became Daejeon's representative food begins with the traces of a warm life that bloomed from the ruins of the Korean War right after the Korean War.

Daejeondae Kalguksu in Byeonjeon, Seo-gu, is one of the places at the center of the history of Daejeon Kalguksu. Entering the rugged and warm exterior, the scent of broth welcomes you, and the hot soup and chewy noodles captivate your taste. The boiled pork that comes with it is soft and moist, forming a fantastic combination with kalguksu, and it is highly satisfying because you can bring as many basic side dishes as you want through the self-bar.

Daejeon naturally became a center of snack foods as a result of the mass distribution of flour as relief supplies from the United States after the 1950s. In particular, the area of Daejeon Station, which was an important railroad transportation hub, served as a window for distributing relief supplies across the country, and there were many milling factories here, and naturally, the number of kalguksu restaurants began to increase. As a result, Daejeon became the city with the largest number of kalguksu restaurants in the country and was nicknamed the "Kalguksu City."

Even now, there are more than 570 kalguksu restaurants in Daejeon, of which about 130 are concentrated in Jung-gu. Daeseon Kalguksu Byeonjeom is famous for its restaurant that contains all the true colors of Daejeon Kalguksu. Located at 110 Byeonjang-ro, Seo-gu, Daejeon, it is popular with local residents as well as travelers due to its large parking lot, cozy indoor atmosphere, and most of all, its thick soup and chewy noodle soup.

The kalguksu here is a bowl full of sincerity with its homemade noodles, cool broth, and fresh mugwort. Boiled pork is also one of the popular menus. Softly boiled pork boasts a perfect balance to eat with kalguksu. When eaten with spicy seasoning, the deep taste spreads in your mouth. The place, which made its name known by appearing on the "Delicious Guys" broadcast, attracts so many customers that you have to line up at lunchtime. Looking at the popularity of this place, which is crowded not only on weekends but also on weekdays, one can realize how much kalguksu is loved in Daejeon.

This culture of kalguksu in Daejeon is not just a matter of taste. Back in 2019, when President Moon Jae In visited Daejeon, kalguksu was also selected as a luncheon menu. It was recommended by Daejeon directly to the Blue House, and President Moon showed interest by asking, "Why is kalguksu famous in Daejeon?" In response, Heo Tae-jeong, the mayor of Daejeon at the time, explained, "Kalguksu has naturally become a common people's food in Daejeon, the center of storing and distributing flour after the war." As such, kalguksu is the history of Daejeon, the life of the common people, and the identity of the city itself.

Kalguksu has now grown into a representative food symbolizing Daejeon. At the 5th Daejeon Kalguksu Festival, countless people gathered to taste various kalguksu in Daejeon and share their deep taste and warm memories. Despite the feast of various flavors such as red beans, spicy fish, chueo, and noodle soup with kimchi, it was "sincere" that was at the center.

If you go to Seo-gu, Daejeon, you should visit the Daeseon Kalguksu Branch. You will be able to feel the scent of history and the warmth of the Daejeon people in a hot bowl. The boiled pork here is special. It was sullied with a knife and less greasy, reducing the taste of the meat. Also, you can enjoy the taste of meat that has not been cooled down by using solid fuel to keep it warm until you finish your meal. It is no exaggeration to say that it tastes perfect with spicy cabbage kimchi. Especially, if you wrap sangchi, red pepper, and garlic in special red pepper paste with spicy soup, and add a full bite, you will feel the taste in your mouth. Everyone will never forget this taste when they taste it.
